Somewhere in late August, the first pumpkin spice latte appears and autumn officially files its paperwork. The PSL is mocked annually and ordered in the hundreds of millions anyway, because its critics miss the point: it was never just a coffee. It is a seasonal starting gun, a hand-warmer, a small ritual of permission to begin the cozy months. Here is how to celebrate the season properly, including making a better one at home.
The homemade PSL, upgraded
The cafe version contains little pumpkin: yours will. Simmer 250ml milk with 2 tablespoons of real pumpkin purée, a tablespoon of maple syrup or brown sugar, a half teaspoon of pumpkin pie spice and a splash of vanilla, whisking until steaming and slightly frothy (a hand frother turns it professional). Pour over a double shot of espresso or 120ml of strong coffee, dust with cinnamon, and add whipped cream only if it is a whipped cream sort of day, which, in October, it often is.
Mix the spice, own the season
Pumpkin pie spice is just a ratio: 3 tablespoons cinnamon, 2 teaspoons ginger, 2 teaspoons nutmeg, a teaspoon each of allspice and cloves. One jar mixed in September seasons lattes, oatmeal, pancakes, roasted squash and every baking project until December, and it makes the kitchen smell like the inside of the entire aesthetic. This five-minute jar is the highest-leverage act of the autumn.
The first-PSL ritual
The first one of the year deserves ceremony: the first genuinely cold morning, the biggest mug, the flannel shirt, ideally a walk through actual falling leaves or at minimum a windowsill with weather in view. Mid-ritual phone use is discouraged: the entire point is twenty unhurried minutes of tasting the season change. Repeat weekly through November: tradition is just repetition with affection.
The extended pumpkin universe
- The iced heresy: same recipe over ice: correct for warm September afternoons, forgiven by all reasonable people.
- The chai crossover: pumpkin and spices simmered into chai instead of coffee: arguably the superior drink, tell no one.
- The dessert wing: the leftover purée becomes pumpkin bread, muffins or overnight oats: nothing in the can is wasted.
- The evening version: decaf base, extra nutmeg, whipped cream mandatory: the nightcap of the season.
In defense of liking things
Every September brings the annual PSL discourse, and every September the correct response remains: enjoyment requires no defense. Seasonal joy, warm hands, spiced air, a drink that tastes like a holiday you can hold, is one of the cheaper forms of happiness on offer. Order it, make it, garnish it, photograph it beside a maple leaf if the spirit moves. It is autumn: that is what it is for.
