Gooey Cinnamon Rolls Worth Waking Up For

A proper cinnamon roll is a small act of generosity: soft enriched dough, a molten cinnamon-sugar spiral, cream cheese frosting melting into the crevices while the pan is still warm. The smell alone reorganizes a household. They take time, most of it hands-off rising, and every minute pays out at the table.

The dough: rich, soft, patient

Warm 240ml milk to lukewarm and dissolve 2¼ teaspoons of yeast with a spoonful of sugar; wait for foam. Add 2 eggs, 75g sugar, 75g soft butter and a teaspoon of salt, then work in about 500g of flour until you have a soft, slightly tacky dough. Knead 8 to 10 minutes until smooth and elastic, then cover and rise somewhere warm until doubled, about an hour. The tackiness is correct: flour-dry dough makes bread, not clouds.

Fill, roll, slice

  1. Roll the dough to a rectangle roughly 40 by 30 cm.
  2. Spread with 75g of very soft butter to the edges, then a mix of 150g brown sugar and 2 tablespoons of cinnamon.
  3. Roll from the long side into a snug (not strangled) log: seam side down.
  4. Slice into 12 with unflavored dental floss or a sharp serrated knife: floss keeps the spirals round.
  5. Arrange in a buttered pan with breathing room: rise again 30 to 45 minutes until puffy and touching.

Bake soft, not brown

Bake at 180°C for 20 to 25 minutes until just golden on top: the centers should stay pale and tender. Overbaking is the number one cinnamon roll crime; pull them when they look almost underdone. A splash of warm cream poured over the risen rolls right before baking is the bakery secret for gooey bottoms, one spoonful, life-changing.

The frosting moment

Beat 115g cream cheese with 55g soft butter, 120g powdered sugar and a splash of vanilla. Frost the rolls while warm, not hot, so the frosting melts into the swirls but does not vanish entirely. Serve from the pan, ideally within the hour, to people who will remember it.

The overnight trick

For warm rolls at breakfast without a 5 am start: assemble the pan the night before, cover, and refrigerate before the second rise. In the morning, let the pan stand somewhere warm for 45 minutes while the oven heats, then bake as usual. Weekend guests will assume things about your discipline that you need not correct.
