Pumpkin soup is autumn’s default comfort, and the difference between the watery cafeteria version and the velvet restaurant one is a single decision: roast the pumpkin first. Roasting caramelizes, concentrates and deepens: everything after that is just blending and gratitude. Here is the full bowl, swirl and all.
Roast, don’t boil
Cut a kilo of pumpkin or butternut squash into wedges (skin on: it lifts off easily after), toss with olive oil and salt, and roast at 200°C for 35 to 40 minutes until the edges brown and the flesh yields completely. Roast a whole head of garlic alongside, top sliced off, wrapped in foil: it turns to sweet paste and belongs in this soup. Build the pot
- Soften a diced onion in butter with a pinch of salt, about 6 minutes.
- Add a teaspoon of grated ginger, a half teaspoon of cumin and a pinch of nutmeg: bloom one minute.
- Add the roasted pumpkin flesh, the squeezed roasted garlic and 750ml of vegetable or chicken stock.
- Simmer 10 minutes, then blend until completely smooth: a full minute longer than feels necessary.
- Finish with 100ml of cream or coconut milk, salt, pepper, and a small squeeze of lemon to lift it.
Too thick, add stock: too thin, simmer uncovered: the target is velvet that coats a spoon.
The topping economy
Plain purée needs contrast, so finish every bowl with texture and richness: a swirl of cream, toasted pumpkin seeds, crispy sage leaves fried in brown butter (thirty seconds, life-changing), chili oil for heat, or crumbled feta for salt. Croutons or grilled cheese soldiers on the side make it dinner rather than a first course.
Variations by mood
Thai-leaning: coconut milk, red curry paste and lime. Smoky: smoked paprika and a chipotle. Harvest-dinner elegant: a splash of maple and extra nutmeg, served in small cups. The base recipe carries all of them, and it freezes for three months, meaning one Sunday of roasting buys a freezer full of future rainy-day rescues.
Serve it like the season
Warm bowls, thick slices of buttered bread, and ideally a window with weather in it. Pumpkin soup is less a recipe than a mood delivery system: make it the first properly cold week of autumn and it becomes tradition by default.
